My Mexican Dish Using Uncle Bens Whole Grain White Rice

**Let me first begin by saying thank you to Mom Central and Uncle Ben’s Rice for making this possible. It was so fun receiving the rice and Apron in the mail.**

Okay, so a number of bloggers were asked to participate in the Uncle Ben’s Blog Tour. I was selected to take part and I wanted to share pictures of our yummy Mexican dinner I made. I also want to say that if you haven’t tried Uncle Ben’s new Whole Grain White Rice (that looks and tastes like white rice but has the benefits of whole grain) you might want to head to the store and pick up a box or two (or three). It really has an amazing taste and I was thrilled to be serving this to my kids.

I never have a problem getting my kids to eat. I seldom buy treats and snacks for the house. My husband sneaks some in on occasion and he really gets a chewing for it. Normally, when he brings goodies in the house; most times it’s ice cream, donuts, cookies and the occasional candy (ARGH!!) Seriously; how am I supposed to be on top of the eating game in my house if my husband keeps bringing that crap in?

So anyways, my point is…I’ve never had an issue with getting my kids to eat. I make what I make and they eat it, or starve. Most of the time, even if they did throw a tissy over what was being served, once they see everyone else eating they’ll make their way to the table to join. And, most of the time they end up liking what’s on their plate and ask for more.

 

My Mexican dishes are a different story. They absolutely love it when I make Enchiladas, Spanish rice and refried beans. There’s just something about meat, melted cheese, tortillas (I use flour), rice and beans that make a meal complete.

In the directions for the rice; it calls for 1 & 1/3 cups water. Since I used two boxes, I used double, plus I added a little bit of salsa. I didn’t have any of the normal ingredients I use when making Spanish rice, so I improvised. Still; it came out yummy. The kids told me it was the best rice I’d ever made. I couldn’t agree more. The rice really did have a great taste and the texture was nice too. I’m definitely going to keep a few boxes in the pantry at all times.

Now, about the rice.

Uncle Ben’s whole grain white, long grain, rice has twice the fiber of brown rice and is naturally low in fat. It has very low sodium and is an excellent source of folic acid, niacin, thiamin & iron. Plus, it cooks in less than ten minutes.

In the end, I can honestly say that using Uncle Ben’s rice made a difference in how my girls enjoyed their dinner. They’ve liked my rice before, but even I enjoyed it (I had two servings-shame on me, I know). I can’t say that it tasted any different than that of typical white rice but knowing that it was made from whole grain made it extra special. I think that’s the point. It’s supposed to taste like what you’re used to, but in essence, it’s much better for you. I’m sold!!!

  2. We are Mexicanfoodaholics here–even my daughter. She has been eating sliced avocado and refried beans since she could eat solids. Nice photos, Patience!

    • Yes, Patience is a whiz at the camera…I’ll have to post up a wordless wednesday soon with pictures she takes of her self; there are many :)

      Dido- we love Mexican food. I am an enchilada freak. I can’t get enough of that stuff…

      Avocados- wow…talk about yum, refried beans too. That is too funny. I guess you can say she’s not a very picky eater huh? My daughters are kind of picky, but I can’t keep enough onions in the house, Patience will eat them all up. Well, Patience will eat just about anything. LOL. Now Piper, that’s a different story. If she doesn’t like what I’m serving, she will go hungry. She refuses to touch the stuff if she doesn’t like it.
